To create this dry, flavorful, Tavel style, field blend Rosato, we hand-harvested grapes in five separate lots. Each pick was a diverse mix of grape varieties from different parts of our unique vineyard. The crushed grapes soaked overnight to allow natural enzymes to extract color and aroma from the skins before we separated the juice. We fermented the juice in stainless steel barrels, stirring the lees daily. As each fermentation progressed and became less active, we topped off the barrels, solera-style (topping the barrels that are farthest along with the lot that is next farthest) to limit oxygen exposure and blend the lots. When fermentation was complete, we transferred the wine to neutral oak barrels to age five months before bottling. The time in barrel added texture and creaminess and allowed the flavors to meld.
