Tasting Notes

This wine tempts with its lovely deep salmon hue and delicate aromatics of watermelon, creamy strawberry, and citrus. The entry bursts with red fruit and bright acidity, which is balanced by a creamy core that lingers. A luscious mix of cherry, wild strawberry, juicy raspberry, and traces of pomegranate create a sophisticated rosé that is still evolving.

Winemaker's Notes

Each year since 2005, we have made a Tavel style field-blend Rosato, by co-fermenting multiple varieties to make a flavorful complex wine. In 2020 we included more of our Medley grapes (like Cinsaut, Viognier, Blue Portuguese, Liatiko, Dornfelder, and the pink-skinned Einset and Suffolk) for extra aroma and flavor. Usually, we leave the juice on the grape skins for 24 hours to let enzymes extract color, aroma, and flavor. In 2020, because of concern about smoke from the wildfires, we lightly pressed the grapes promptly after crushing. Then we fermented the juice in stainless steel drums, without skins, with native and cultured yeast. We added a small amount of Syrah for color. After fermentation, we blended the lots and racked the wine to neutral oak barrels to age three months before bottling.
