Tasting Notes

The wine has a vibrant deep salmon color, and inviting aromas of fresh-picked red berries, with hints of pear and flowers. The creamy entry glides into lively acidity that continues through the lengthy finish. Delicious, crisp flavors of juicy raspberry, apple, and cherry infuse the taste buds and linger on.

Winemaker's Notes

Like every ACORN wine, our 2018 Rosato is a field blend of co-fermented varieties. Its vibrant vermilion color—like a Tavel from France—signals that it is more flavorful than its paler cousins. Not just a summer refresher, this is a wine to enjoy all year. To produce this crisp, dry field blend, we picked and crushed small lots on six different days. Each lot was a different field blend. Natural enzymes helped each lot absorb color and flavors from the skins overnight before we pumped the juice off, and lightly pressed the remaining must, with our old basket press, into stainless steel barrels. Native yeasts and cultured strains from France and Portugal fermented the juice to dryness. As fermentation slowed, we topped each barrel with the next-driest lot, to further blend the varieties and limit oxygen exposure in the barrels. When fermentation was nearly complete, we blended the lots and transferred the wine into neutral French and Hungarian oak barrels. Aging for 3 months in those barrels softened the wine and added structure before bottling.
