Tasting Notes

Subtle aromas of mixed red berries and rose petals. The smooth entry reveals a delicious blend of raspberry, strawberry, cherry, and a touch of apple. A bright mid-palate exposes a kiss of freshness that further enhances this wine’s appeal. A lingering cherry essence remains, enticing the next sip to repeat the delight all over again.

This refreshing, dry rosé will pair perfectly with arugula and fresh cherry salad with goat cheese and candied pecans, a tuna niçoise salad, or grilled turkey stuffed with rosemary, garlic, and sliced lemons.

Winemaker's Notes

Vibrant vermillion signals that this is a flavorful rosé. Like a French Tavel, this wine can be enjoyed year around.

To produce this crisp, dry 2019 Rosato, we picked on four separate days: each harvest a different field blend. After crushing, we left the juice on the skins overnight while natural enzymes extracted color, flavor, and aroma. Native yeasts and a yeast from South Africa called Cross Evolution highlighted mouthfeel and aroma. As the wine fermented, through October, in stainless steel drums, we topped off each lot with the next-picked lot. At dryness, we blended all the drums and transferred the blend to five neutral 70-gallon Hungarian and French barrels. Oak-aging for 3 1/2 months before bottling added texture to the wine.
